Pinto Beans with Tasso | Cajun 911 Cuisine
Fresh pinto beans cook quickly and turn creamy without breaking. After a short boil, they’re simmered with smoky Tasso, Cajun aromatics, and simple seasoning. For an extra layer of richness, shredded pot roast can be folded in at the end. This is classic Louisiana beans and rice cooking — efficient, flavorful, and deeply comforting.
INGREDIENTS
BEANS
1 lb fresh pinto beans, rinsed
6 cups chicken stock or water
1 cup Tasso, diced
1/2 onion, diced
1/2 bell pepper, diced
2 cloves garlic, minced
1 Tbsp butter or oil
1–2 bay leaves
1/2–1 tsp Cajun seasoning
1/2 tsp black pepper
Salt to taste
Optional crushed red pepper
OPTIONAL ADD-INS
1–2 cups shredded leftover pot roast
Chopped parsley and green onion for garnish
INSTRUCTIONS
1. Boil Fresh Pinto Beans
Place fresh pinto beans in a pot with 6 cups stock or water. Bring to a gentle boil and cook 15–30 minutes, until tender but intact. Drain and set aside.
2. Build the Flavor Base
In a large pot, heat butter or oil over medium heat. Sauté onion and bell pepper until softened. Add garlic and cook 20–30 seconds until fragrant.
3. Add the Tasso
Add diced Tasso and cook 2–3 minutes to release smoky flavor.
4. Add Beans and Seasonings
Add the pre-boiled beans to the pot. Stir in bay leaves, Cajun seasoning, and black pepper. Add enough stock to just cover the beans.
5. Simmer to Develop Flavor
Simmer on low for 20–30 minutes. Mash a few beans against the side of the pot to thicken if desired. Salt at the end.
6. Optional: Add Pot Roast
Fold in shredded pot roast and simmer 5–10 minutes to warm through.
7. Serve
Serve over rice or with cornbread. Garnish with parsley or green onions if desired.
