This Mexican–Cajun shrimp cocktail blends Gulf-style boiled shrimp with fresh tomatoes, corn, lime, cilantro, and Cajun seasoning. Using seafood cocktail sauce keeps it bright and coastal, while optional vegetable juice adds depth and a more traditional, savory finish. INGREDIENTS
FOR THE SHRIMP
1 lb medium shrimp, boiled or steamed and chilled
1 tsp Cajun seasoning
1 Tbsp lime juice
Pinch of salt
VEGETABLE MIX
1 cup tomatoes, diced
1/2 cup red onion, finely diced
1/2 cup corn kernels, fresh or grilled
1/4–1/2 cup fresh cilantro, chopped
1 jalapeño, minced, optional
1 avocado, diced, optional
CITRUS–COCKTAIL SAUCE DRESSING
1/3 cup seafood cocktail sauce
2–3 Tbsp lime juice
1 Tbsp Louisiana-style hot sauce
1–2 tsp Worcestershire sauce
1 tsp cane syrup or sugar, optional
Salt and black pepper, to taste
Optional pinch Cajun seasoning
Optional 1/4–1/2 cup vegetable juice
INSTRUCTIONS
1. Season the Shrimp
Combine the chilled shrimp with lime juice, Cajun seasoning, and a pinch of salt. Refrigerate while preparing the remaining ingredients.
2. Mix the Vegetables
In a large bowl, combine tomatoes, red onion, corn, cilantro, and optional jalapeño and avocado.
3. Make the Dressing
Whisk together seafood cocktail sauce, lime juice, hot sauce, Worcestershire sauce, optional cane syrup, salt, black pepper, optional Cajun seasoning, and optional vegetable juice until smooth.
4. Combine and Chill
Pour the dressing over the vegetable mixture. Fold in the seasoned shrimp gently. Chill for 15–20 minutes to allow flavors to blend.
5. Serve
Serve chilled in cocktail or martini glasses, small bowls, or over crisp lettuce. Garnish with lime wedges, cilantro, or a shrimp on the rim.
