This bright, herb-forward apple salad blends crisp apples, ginger-infused carrots, almonds, coconut, cilantro, and fresh lime for a clean, refreshing bite. Light yet flavorful, it pairs beautifully with seafood or chicken and works just as well as a side dish or a light lunch salad.

INGREDIENTS 

 

For the Salad

2 apples, thinly sliced or matchstick cut (Honeycrisp, Fuji, or Gala)

1 cup shredded carrots

1 tsp fresh grated ginger

1/4 cup sliced almonds

1/4 cup shredded coconut, fresh or lightly toasted

1/4 cup fresh cilantro, chopped

 

 

For the Lime Dressing

3 Tbsp fresh lime juice

2 Tbsp olive oil or avocado oil

1 tsp honey or agave

Pinch of salt

Pinch of black pepper

 

 

  

INSTRUCTIONS

1. Prepare the Ginger Carrots

Combine shredded carrots and fresh grated ginger in a bowl. Add a small squeeze of lime juice and massage gently. Let sit for 5 minutes to soften and absorb flavor.

2. Assemble the Salad

Add sliced apples, ginger carrots, almonds, coconut, and cilantro to a large bowl. Toss gently to combine.

3. Make the Lime Dressing

Whisk together lime juice, olive oil or avocado oil, honey or agave, salt, and black pepper. Adjust sweetness or acidity to taste.

4. Dress the Salad

Pour the dressing over the apple mixture and toss lightly until evenly coated. Let sit for 5 minutes for flavors to bloom.

5. Serve

Serve chilled or at room temperature. Garnish with additional cilantro, almonds, or lime zest if desired.
