This creamy tomatillo salsa blends roasted tomatillos, garlic, jalapeño, onion, cilantro, and lime into a silky sauce with a bright tang and smooth finish. Perfect as a dip or topping for tacos, seafood, grilled meats, bowls, and vegetables, this versatile green sauce delivers bold flavor with balanced creaminess.

INGREDIENTS 

 

Roasted Vegetables

6–7 tomatillos, husked and rinsed

1 jalapeño (use 1/2 for mild)

2 garlic cloves, unpeeled

1/4 cup white or red onion

1–2 tsp olive oil

 

Creamy Base

1/4 cup sour cream or Greek yogurt

2 Tbsp mayonnaise, optional

Juice of 1 lime

Handful of fresh cilantro 

 
 

INSTRUCTIONS

 

1. Roast the Vegetables

Heat a skillet or sheet pan over medium-high heat. Add the tomatillos, jalapeño, onion, and garlic (still in the peel). Drizzle lightly with olive oil and roast until blistered and softened, about 5–7 minutes per side. Remove from heat and allow to cool slightly.

2. Blend the Salsa

Squeeze the roasted garlic from its peel. Add the roasted vegetables, cilantro, lime juice, sour cream (and optional mayonnaise), salt, and black pepper to a blender. Blend until smooth and creamy.

3. Taste and Adjust

Taste the salsa and adjust as needed. Add more lime juice for brightness, more jalapeño for heat, additional mayonnaise for richness, or salt to balance the flavors.

 
SERVING IDEAS 
  • Serve with shrimp tacos or grilled fish tacos

  • Use as a dip for chips

  • Drizzle over shrimp or chicken bowls

  • Spoon over grilled vegetables

  • Use as a sauce for blackened fish or seafood

 

NOTES
  • Add 1–2 tablespoons of water for a thinner, pourable consistency

  • Add extra cilantro for a brighter green color

  • Char the vegetables briefly under the broiler for a lightly smoked flavor
