These creamy, silky grits are made exclusively with chicken stock for deep, savory flavor. A touch of pink peppercorn adds a gentle floral Cajun twist, and the grits are finished with sharp cheddar and butter for richness. Served beneath a hearty Cajun sausage brown gravy built from a blonde roux and fresh sausage, this dish is comforting, bold, and deeply Louisiana at heart.

INGREDIENTS 

 
Creamy Cheesy Grits

4 cups chicken stock, no water

1 cup stone-ground grits

1 cup shredded sharp or white cheddar

2 Tbsp butter

1/4 cup heavy cream, optional

1/4–1/2 tsp crushed pink peppercorns

Salt, to taste

 

 
Cajun Sausage Brown Gravy

3/4 lb fresh Cajun sausage, casings removed

2 Tbsp butter, as needed

3 Tbsp flour

1/2 cup onion, finely diced

1/2 cup bell pepper, minced

1 clove garlic, minced

2 cups beef or chicken stock

1/2 tsp Cajun seasoning

  1/4 tsp black pepper

1 clove garlic, minced

Cajun Flavor

 1 tsp Cajun seasoning

 1/2 tsp lemon pepper, optional

 1/2 tsp black pepper

 Salt, to taste

 Optional: pinch of paprika

 

Citrus

 1–2 tsp lemon or lime juice

 

 

INSTRUCTIONS

 

1. Mix the Base

Whisk together mayonnaise, sour cream, and buttermilk until smooth.

2. Add Garlic and Herbs

Stir in garlic, parsley, chives or green onion, and dill until evenly combined.

3. Season Cajun Style

Add Cajun seasoning, lemon pepper if using, black pepper, and salt. Adjust seasoning to taste.

4. Add Citrus

Stir in lemon or lime juice to brighten the dressing.

5. Chill

Refrigerate for at least 30 minutes before serving to allow flavors to develop.

 
SERVING IDEAS 
  • Dip for fried seafood, fries, wings, or onion rings

  • Dressing for salads or pasta salads

  • Spread for burgers, wraps, or sandwiches

  • Sauce for blackened chicken or shrimp

 

NOTES
  • Add more Cajun seasoning for extra heat

  • Thin with additional buttermilk if desired

  • A spoonful of Parmesan adds extra richness
