This crisp, chilled wedge salad is a Cajun 911 steakhouse classic. Iceberg lettuce is topped with a silky blue cheese dressing made with evaporated milk, fresh tomatoes, bacon, and a finishing touch of pink salt and cracked black pepper. Simple, nostalgic, and perfectly balanced, this salad pairs beautifully with steaks, seafood, or classic Cajun entrées.

INGREDIENTS 

 
For the Salad

1 head iceberg lettuce, cut into 4 wedges

1 cup cherry tomatoes, halved

4–6 slices bacon, cooked and crumbled

1/4 red onion, thinly sliced, optional

1/4 cup green onions, chopped

 1/4 cup blue cheese crumbles

Fresh cracked black pepper

 

Blue Cheese Dressing (With Evaporated Milk and Optional Bacon)

1/2 cup mayonnaise

1/2 cup sour cream

1/4 cup evaporated milk

1/2 cup blue cheese, crumbled

1 tsp lemon juice

1/2 tsp Worcestershire sauce

Pink salt, to taste

Black pepper, to taste

2–3 Tbsp crumbled bacon, optional

 

 

INSTRUCTIONS

 

1. Make the Dressing

Combine mayonnaise, sour cream, evaporated milk, blue cheese, lemon juice, Worcestershire sauce, pink salt, black pepper, and optional bacon in a bowl. Stir gently, leaving some blue cheese chunks intact. Refrigerate for 10–20 minutes.

2. Prepare the Wedges

Remove any outer leaves from the iceberg lettuce. Cut into four wedges, rinse lightly, and pat dry. Keep chilled until ready to serve.

3. Assemble the Salad

Place lettuce wedges on plates and spoon dressing over each wedge. Top with tomatoes, bacon, red onion if using, green onions, and additional blue cheese. Finish with pink salt and cracked black pepper.

  • Evaporated milk gives the dressing a silky, rich finish
