Beet Quinoa Salad with Pistachios & Orange | Cajun 911 Cuisine
This vibrant Cajun 911 salad features quinoa cooked directly in beet juice for bold color and earthy sweetness. Fresh oranges, toasted pistachios, herbs, and a light citrus dressing come together to create a refreshing, elegant dish that works beautifully as a side for seafood, roasted meats, or a standout addition to holiday tables.
INGREDIENTS
Beet Quinoa
1 cup quinoa, rinsed
2 cups beet juice
Pinch of salt
Salad Mix
2 oranges, segmented or cut into small wedges
1/3 cup pistachios, toasted and chopped
1/4 cup fresh parsley, chopped
1/4 cup green onions, sliced
Optional: 1/4 cup feta or goat cheese
Citrus Dressing
3 Tbsp olive oil
1 Tbsp orange juice
1 Tbsp lemon juice
1 tsp honey or cane syrup
Pink salt and black pepper, to taste
Optional: 1/2 tsp Dijon mustard
INSTRUCTIONS
1. Cook the Quinoa in Beet Juice
Combine quinoa, beet juice, and salt in a pot. Bring to a boil, then reduce heat, cover, and cook for 15 minutes. Turn off heat and let sit for 5 minutes. Fluff and allow to cool slightly.
2. Prepare the Salad Ingredients
Segment the oranges. Toast the pistachios in a dry pan until fragrant, then chop. Chop the parsley and slice the green onions. If using, crumble the feta or goat cheese.
3. Make the Dressing
Whisk together olive oil, orange juice, lemon juice, honey, pink salt, black pepper, and Dijon mustard if using.
4. Assemble the Salad
Combine beet quinoa, oranges, pistachios, parsley, and green onions in a bowl. Drizzle with dressing and toss gently. Top with optional cheese.
5. Serve
Serve warm, at room temperature, or chilled. Pairs well with blackened fish, grilled meats, or roasted vegetables.
