This moist, fragrant lemon blueberry bread is bright with citrus and bursting with fresh blueberries. A butter-and-sugar–lined pan creates a lightly caramelized crust, giving this Southern-style quick bread a golden finish that’s perfect for breakfast, dessert, or a sweet afternoon treat.

INGREDIENTS 

 

DRY INGREDIENTS

1 1/2 cups all-purpose flour

1 cup sugar

1 1/2 tsp baking powder

1/2 tsp salt

 

WET INGREDIENTS

2 large eggs

1/3 cup vegetable oil or melted butter

1/2 cup milk or evaporated milk

Zest of 1 large lemon

Juice of 1/2 lemon, optional

1 tsp vanilla extract

 

FRUIT

1 cup fresh blueberries

1 Tbsp flour, for tossing berries

 

PAN COATING

2–3 Tbsp softened butter

2–3 Tbsp sugar

 

 

INSTRUCTIONS

1. Prep the Pan

Grease a loaf pan generously with softened butter. Coat the pan with sugar, tapping out any excess.

2. Mix Dry Ingredients

In a bowl, combine flour, sugar, baking powder, and salt.

3. Mix Wet Ingredients

In a separate bowl, whisk eggs, oil or melted butter, milk, lemon zest, optional lemon juice, and vanilla.

4. Combine

Pour wet ingredients into dry ingredients and fold gently until just combined.

5. Add Blueberries

Toss blueberries with 1 tablespoon flour, then gently fold into the batter.

6. Bake

Pour batter into the prepared pan. Bake at 350°F for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from the pan.

 
SERVING IDEAS 
  • Drizzle with a simple lemon glaze

  • Toast slices and serve with butter

  • Serve with whipped cream or fresh berries

  • Pair with coffee or tea

 

NOTES
  • Add extra lemon zest for stronger citrus flavor

  • Substitute mixed berries if desired

  • Add poppy seeds for a classic lemon-poppy twist
